It turned out really well that we had the day off. Carly had a bit of a cough yesterday and this morning it was worse. She looked really pale and washed out. We knew if we didn't take her in today that we'd likely be taking her in tomorrow. Paul brought her over to the clinic where she was able to get in with our regular doctor right away. She'll be taking Zithromax the next few days. There is a pharmacy in the clinic, so it was nice that he was able to just do one stop with her. Hopefully she'll perk up quickly. Paul did say that the roads were very icy on the bridges and no one is out today.
Right before they left I made up a pan of bars. I got this recipe from the parent of a student. Back in the days when we allowed parents to bring in homemade items, she brought these in for her son's birthday. I made these on Saturday when Royce & Lynn came up. What is nice about this recipe is that I almost always have the ingredients on hand. Ellen even likes them which says something since she is my Simon/like food critic. My camera battery is charging right now. I'll add a picture later.
Peanut Butter Bars
Mix together:
1/2 cup butter/margarine (I use butter flavored Crisco)
1/2 cup sugar
1/2 cup brown sugar
1/2 cup creamy peanut butter
1 egg
1 tsp vanilla
Add:
1 cup flour
1/2 cup quick cooking oats
1 tsp baking soda
1/4 tsp salt
Spread into a greased 9x13 pan. Sprinkle 1/2 bag of chocolate chips over the top. Bake at 350 for 20 to 25 minutes or until lightly brown. Cool for ten minutes.
While the bars cool mix together:
1/2 cup powdered sugar
2 Tbsp creamy peanut butter
2 Tbsp milk
Drizzle the icing over the bars.
